Beetroot burgers
I’m not a vegetarian although I must say I hardly eat any meat, and only every now and then some fish. I prefer to eat veggies because that’s what I like most. I eat a lot of vegetable protein to replace the animal and sometimes I also use some pea protein power when I think I can use a little bit extra. I don’t stress too much about it however and my blood markers are always good.
Today a first try to make beetroot burgers. Taste and texture was good although I would go easy on the ginger which is quite present, maybe I used more than the recipe said 😉
Here’s what I used for 6-8 burgers:
- 300-350 gram raw beetroot
- 100 gram feta (goat or sheep)
- 1 union
- about 20 gram ginger
- 1 egg
- 30 gram of oats
- some flour for consistency
Peel the beets into pieces. Same with the ginger, the union and the feta. Pour everything into your foodprocessor apart from the flour. Mix until you have got the mixture uniform. Put away in the fridge for about 30 minutes. Take it out, look at the consistency and see if it needs a little bit of flour or not. Make patties.
I baked them in about 40 minutes on 190ºC and I loved them although a bit gingery 😉
Add less or more to taste.
