One of my favorite breakfasts!
Easy, tasty and healthy. Toast some ‘real’ bread. For me the darker the better but that all depends on your taste. Please choose a good quality bread and watch out for any added sugars, preservatives etc.
Personally I don’t eat much bread but that’s a personal choice. In case you want to eat bread then at least try to buy the healthiest option.
What I used (although you can’t see it…) is rye bread without the additives. I smashed half an avocado and seasoned with salt and pepper. Then I fried an egg in coconut oil and put it on top. The last bit is sprinkling the Shiitake mushrooms on the egg. I’m always generous with my veggies that’s why they are on top and all around.
